Ingredients For Cookies
- Butter – 1 cup, unsalted
- Sugar – 1 cup, granulated
- Eggs – 2, whole
- Vanilla Extract – 1 and a half teaspoon
- Salt – ½ teaspoon
- Baking Soda – ½ teaspoon
- All-purpose Flour – according to need
Ingredients For Glaze
- Unsalted Butter – ¼ cup
- Milk – ¼ cup
- Vanilla Extract – 1 teaspoon
- Confectioners or Powdered Sugar – 3 cups
- Food Color – a few drops, any colors of your choice
- Sprinkles – as you wish
Preparing The Dough
To make Soft Sugar Cookies with Icing, start by mixing butter and sugar in a bowl. Mix these two ingredients together until they are blended together. Then add two whole eggs and a teaspoon and half Vanilla Extract and blend again. Make sure that the Vanilla extract you’re using doesn’t overpower the flavor of the Cookies. Now add half a teaspoon of Salt and Baking Soda to the mix and blend it all once more.
Add 3 cups of all-purpose flour and mix it until you end up with a nice thick dough. Once done, divide the dough into small pieces and wrap them all in cling film. Cling film prevents the surface of the dough from drying. Now put these wrapped dough pieces in the fridge for at least 2 hours, freezing makes the dough easier to roll.
Making Shapes Out Of Dough
After 2 hours, take the dough out of the fridge and unwrap it. Then, flour the surface where you’re going to roll the dough as it prevents it from sticking. Breaking up dough into further smaller pieces makes it easier to work with.
Just knead the dough a little bit so it softens and then, roll the dough to the thickness of a quarter inch. Now cut this dough layer into small shapes like squares, circles, stars, etc. Make sure you keep on flouring the dough so it doesn’t stick on the surface.
Baking The cookies
Place all the cutouts on top of a parchment-lined cookie sheet. Make sure there’s about a centimeter gap among the cookies. Now it’s time to bake these cookies for 4 to 6 minutes in the oven until they turn slightly puffy and look slightly golden brown on the back. Once baked, take the cookies out of the oven and let them cool.
Time To Make Glaze For Cookies
In a bowl, combine a quarter cup of unsalted softened butter and a quarter cup of milk. Use softer and melty butter as it blends into the milk easily. After mixing these, add a teaspoon of Vanilla Extract and 3 cups of Confectioners or Powdered Sugar. Blend these ingredients together until it gets as thick and consistent as you wish. You can add more sugar to increase the thickness of the Glaze. Now mix some food coloring into the Glaze, you can use any colors of your choice. Decorate the Sugar Cookies with Glaze and top off with some sprinkles. Your tasty Soft Sugar Cookies with Icing are now ready.
