Easy Healthy Recipes: Chicken Satay Salad
- 1tbsp soy sauce
- 1tsp medium curry powder
- ¼ tsp powdered cumin
- One garlic clove, shredded properly
- 1tsp honey
- 2chicken breast(without skin)
- 1tbsp peanut butter( select sugar- free one with no palm oil)
- sweet chili sauce 1tbsp
- 1tbsp lemon juice
- Sunflower oil just for wiping the pan
- Two small gem lettuce hearts, slit them in wedges
- ¼ cucumber, cut into half and sliced properly
- 1banana shallot, cut into half and slices properly
- A right amount of chopped coriander
- ½ pomegranate seeds
In a large dish put soy sauce and mix curry powder, powdered cumin, garlic, and honey. Cut the chicken breast in half to make four fillets then add it to marinade sauce mixture and mix well to coat. Keep this in the refrigerator for at least 1hr.
Meantime, Combine peanut butter with chili sauce, lemon juice, and 1tbsp water to make at least a spoon full of sauce. Put some oil on nonstick frying pan add chicken and cook cover it with lid, keep it on medium heat for 5-6 minutes, change the side of fillets for last minutes until cooked but still moist. Keep aside covered for some time.
Now toss the lettuce with cucumber, shallot, coriander and pomegranate and plate it. Drizzle some sauce over it. Cut the chicken and place it on top of the salad and pour the remaining sauce. Serve hot.

- 1tsp olive oil for pan
- Four medium poblano peppers(adequately cleaned)
- 1tbsp olive oil
- Two medium tomatoes (sliced)
- ½ medium onion (sliced)
- 1tbsp crumbled garlic
- 1tsp oregano (dried)
- powdered cumin 1tsp
- 1tsp grained salt
- 2cups cooked chicken breast
- 1cup skim cheese, grated
- ½ cup shredded cilantro
- ½ cup American cheese
Preheat oven at 400 degrees F. Place a big baking sheet with foil and drizzle little olive oil. Slit down the side of each pepper. Keep it aside
In a large saucepan pour olive oil and heat it on medium-high flame. Now add tomatoes, onion, garlic, oregano, cumin, and salt. Cook, often mix for about 7 minutes until liquid evaporates. Turn off the heat, mix in the chicken the skim cheese and the cilantro, combine well
Split the filling among the peppers, stuff it from top and press it gently to fill it to the entire pepper. Keep the stuffed pepper to bake till it gets soft and bakes for 20-30 minutes.
Take out the baking sheet and switch the oven to grill. Put American cheese on the top of the pepper and grill for 2 minutes till cheese melts. The dish is ready.
