Mexican food is different, full of flavor and greatly omnivorous, both comfortable and stylish. Mexican meals are easy to prepare. Corn, cheese, and beans have created the foundation of the Mexican diet. Additionally to these staples, Mexican food makes enough use of other local American food including tomatoes, avocados, and potatoes, etc. Tortillas are mainly used in Mexican meals. Tortillas are flatbread made of corn and wheat flour. In addition to tortillas, corn flour is also used in manufacturing a variety of bread. Some of the easy Mexican meals are:-

Easy Meals: Mexican Bean Salad


  • One can black beans, cleaned and rinsed
  • 1can kidney beans rinsed  properly
  • 1can white  beans rinsed properly 
  • 1green bell pepper, diced
  • 1red bell pepper, diced
  • One package frozen corn kernels
  • 1onion, diced
  • ½ cup olive oil
  • ½ red wine vinegar
  • 2tbsp fresh lime juice
  • 1tbsp lemon juice
  • 2 tbsp white sugar
  • 1 table salt
  • One clove crumbled garlic
  • ¼ cup chopped cilantro
  • ½ tbsp powdered cumin
  • 1/2tbsp powdered black pepper
  • 1dash hot pepper sauce
  • 1/2tsp chili powder


Take a big bowl, add beans, bell pepper, frozen corn, and red onion

In a small bowl, beat together olive oil, red wine vinegar, lemon juice, sugar, salt garlic, cilantro, cumin, and black pepper. Add hot sauce and chili powder to enhance the taste.

Put olive oil dressing on vegetables, combine well. Cool thoroughly and serve cold

Easy Meals: Easy Mexican Rice


  • 2tbsp vegetable oil
  • ¼ medium onion chopped
  • 1 ½ cup unprepared long-grain white rice 
  • 3cloves garlic (diced)
  • 2 ½ cup chicken stock
  • 1 cup tomato pulp
  • Four dollop tbsp fresh parsley, finely diced(Totally optional)
  • ½ cup diced vegetable carrots, green beans, bell pepper, peas, etc. (totally optional)


Take a medium pan, pour oil and heat it on medium heat. Put fresh onion and stir fry for 1-2 minutes until softened and transparent.

Put dry rice and continue to stir fry, frequently moving for 5 minutes till rice turns golden brown. Don’t let the rice burn. Put garlic in the rice and stir for 1more minute.

Take off the flame, put chicken stock and tomato pulp, plus the parsley and other vegetables if using, stir properly. Keep pan to the heat and let it boil. Turn the heat down and cover it with lid.

Let it boil for 20 minutes without taking the cover off. After 20 minutes, take off the lid and put in the spoon in cooked rice carefully. If the base of the pan is dry, that means rice is ready if there is some stock noticeable let it cook for few more minutes

Once the rice is cook, take off from the heat and let it rest, enclosed and untouched for almost 10 minutes. Mix the rice with a fork before serving

Mexican cuisine also contains proteins which help in boosting the energy levels and keep muscles and tissue healthy
