Orecchiette With Broccoli Rabe Pesto

Ingredients Required To Prepare The Dish

A bunch of broccoli rabe

Half cup of toasted pistachios

Three fourth cup of Parmigiano Reggiano cheese

Kosher salt

One-fourth cup of skim ricotta cheese

Half pound orecchiette pasta

A little extra virgin olive oil

Step By Step Method To Prepare The Dish

At first,  take a large pot and add salted water to bring it to boil. Set ice-cold saltwater aside. Add the broccoli rabe to the water for one or two minutes to combine. Then quickly add it to the ice-cold salted water. It resists the rabe from getting overcooked. The rabe takes a green color.

Next, drain the water from broccoli rabe and chop it. Then paste the rabe on a food processor. Then add the Parmigiano and pistachios until it gets smooth. After that,  add seasonings if required. Add the ricotta and the pulses until it’s combined. Taste the mixture for flavors and set it aside.

After that, take a large pot of salted water and bring it to boil. Cook the pasta in the pan and cook it less a minute than referred in the package. When the pasta is cooking, pour the pesto in a large skillet and add the pasta water. Cook the pasta over medium heat. As soon as the pasta is ready, add the skillet pesto with the pasta. Stir and cook for two minutes until the sauce gets thick and creamy. Finally,  turn down the heat and add two tablespoons of olive oil as per choice. Mix it well and garnish it with Parmigiano before serving.

Easy Vegetarian Recipes: Skillet Eggs With Squash

Eggs in preparing easy vegetarian recipes can be odd. However, it is healthy and tasty.

Ingredients Required To Prepare The Dish

Three pounds of Zucchini or squash

Kosher salt

Four thinly sliced scallions

Two tablespoons of virgin olive oil

One seeded and minced jalapeno pepper

Three tablespoons of chopped parsley

One-fourth teaspoon of grated nutmeg

Ground pepper powder

One tablespoon of butter (no salt)

Six large size eggs

Half cup of white cheddar cheese

Step By Step Method To Prepare The Dish

Firstly, take a box grater and grate the squash using its large holes. You can also use a food processor for the procedure. Toss and mix it with a pinch of salt. Wait for forty minutes, until it drains completely. You can squeeze it to fast the process.

Next, you have to preheat the oven at three hundred seventy-five degrees. Take a large ovenproof skillet and heat oil in it. Arrange three spoons of scallion green and add the rest with salt, jalapeno, and cook for three minutes the scallions until it is soft. Then add the shredded squash and cook for seven minutes until it gets tender. Mix with nutmeg, parsley, and pepper for flavor and added taste. Cook for a minute until it gets dry. Then let the mixture cool for five minutes.

The next step is to pour the squash evenly in the ovenproof skillet. With the help of the back of the spoon,  make six-two and half inches gaps, and add butter in each hole.  Also, add eggs in each of them. You can season it with salt and pepper. Add some cheese as added toppings. 

Finally,  bake the egg whites for ten minutes until it is set and yolks are well cooked. Sprinkle the scallions as toppings before serving the dish.
