3 tbsp. of extra-virgin olive oil
Two stalks of celery that are chopped
One to two cups of chopped seasonal vegetables
Six minced cloves of garlic
½ tsp. of dried thyme
One large tin of diced tomatoes
4 cups of vegetable broth
2 cups of water
Three peeled and chopped carrots
One tsp. of salt
Two bay leaves
One chopped white onion
One pinch of red pepper
One cup of quinoa (rinsed well)
One can of northern beans or chickpeas (rinsed and drained well)
One cup of chopped curly kale
One to two tsp. of lemon juice
Grated Parmesan cheese (optional)
Preparation Of Quinoa Vegetable Soup:
Step-1: heat the extra virgin olive oil in an oven or soup pot. Add onions, carrots, seasonal vegetables, chopped celery stalks, and a pinch of salt. However, make sure oil is heated before adding vegetables.
Step-2: cook for 5-8 minutes, or until the onion has turned into translucent.
Step-3: Now, add thyme and garlic in the pot. Cook until aromatic. Stir it frequently for one minute. Now, add the tinned tomatoes in the soup pot — Cook for few more minutes.
Step-4: pour in the broth, some water, and quinoa. Add salt, bay leaves, and red pepper flakes. Heat it and stir often.
Step-5: reduce heat to maintain a simmer and cook for 30 minutes and then remove the lid.
Step-6: add beans and chopped curly kale. Continue in gentle simmer for 3-5 minutes. Remove the pot from the heat.
Step-7: Add one tsp. of lemon juice for taste. After adding lemon juice, you can add ½ tsp. of salt to get the flavor.
Step-8: divide it into bowls and top it with parmesan cheese if you like.
